The Director of F&B provides leadership and oversight for all food and beverage outlets and culinary areas at Saint Kate. As a member of the Executive Committee, this individual will focus on finding additional means to drive strategic food and beverage programs while increasing the profitability and efficiency of the division. WHAT YOU WILL BE DOING Drive improvement in guest satisfaction metrics and maintain a strong, visible presence throughout the hotel to support both guests and associates. Promote a positive work environment by enhancing associate satisfaction, supporting retention efforts, and encouraging internal career growth and succession development. Monitor financial performance for all outlets, including labor management, expense control, and budget adherence, while identifying opportunities for improvement and implementing corrective measures. Participate in weekly forecasting, scheduling, and strategic planning and assist with the creation of the annual hotel budget and support ongoing planning and action plan development. Provide leadership to banquets and the food & beverage outlets - to include restaurants and IRD Revise, generate, and direct standard operational controls Develop pricing, service, and product strategies Identify and stay current on market trends within the industry Determine budgets and set guidelines for Food & Beverage division utilizing the appropriate systems to control all costs and maximize profitability Utilize customer satisfaction surveys to develop and implement action plans to address areas of need Work closely with purchasing department to ensure operational costs are within budget Ensure accurate and timely accounting and reporting requirements are met Supervise inventory management Own vendor and customer relations Conduct regular departmental walkthroughs to ensure all areas of resort operations meet company standards Ensure safety and sanitation requirements are being adhered to Establish performance standards and assist in the recruitment & retention of staff Establish development opportunities for high potential associates seeking growth Other duties as assigned WHAT WE ARE LOOKING FOR 5+ years of progressive Food & Beverage leadership experience, including at least 3 years in an executive-level role within high-volume hotel, restaurant, catering, or resort environments Experience in full-service hotels preferred Strong knowledge of Food & Beverage operations, including service standards, culinary and beverage programs, and food safety Demonstrated financial acumen with experience managing P&Ls, forecasting, inventory controls, revenue performance, and capital expenditures Proficiency in Microsoft Office (Word, Excel, PowerPoint, Outlook) and POS systems Strategic and entrepreneurial mindset with the ability to drive innovation, creativity, and continuous improvement Strong understanding of local market trends and competitive landscape Exceptional leadership skills with a proven ability to motivate, mentor, and develop high-performing teams Excellent interpersonal, written, and verbal communication skills High level of integrity with the ability to handle confidential information with discretion Dependable and adaptable, with the ability to work a flexible schedule including days, evenings, weekends, and holidays WHAT'S IN IT FOR YOU Participation in the annual Executive Committee bonus program Free Downtown Parking Medical, dental, vision and life insurance offered for full-time associates after one month of employment Eligibility for 401K participation, with company match, following one month of employment Paid Time Off accrual starting on first day Discounts at Marcus Hotels & Resort locations including hotel, golf, ski, and spa Free/discounted movie tickets at Marcus Theater locations Career development opportunities ABOUT US A division of The Marcus Corporation, Marcus Hotels & Resorts has a rich 60-year history of operational and service excellence.
